Butternut Squash Casserole

The quest to broaden my healthy and baby led weaning friendly meal repertoire continues with this Butternut Squash Casserole. It's a brilliant autumn recipe, hot, filling, packed with vegetables and gorgeous warm autumnal colours. I did this casserole with some grilled chicken and brown rice.
It uses an ingredient called "bulghar wheat" which is completely new to me but it does a great job of packing a bit of "stodge" in to a dish.

Obviously you can see it went down a storm with the small one...

I just had to make sure the sweet potato and butternut squash were in big graspable chunks...

Great recipe! Once again BBC Good Food comes up trumps! Give it a go! :D

  1. Yum! We will soon be eating a lot of squash and pumpkin (we have a winter CSA) so this looks like it should make it into my rotation! Thanks for sharing!

    1. She did indeed! I think root veggies and sweet things like this are a pretty easy win with her :)
