The quest to broaden my healthy and baby led weaning friendly meal repertoire continues with this Butternut Squash Casserole. It's a brilliant autumn recipe, hot, filling, packed with vegetables and gorgeous warm autumnal colours. I did this casserole with some grilled chicken and brown rice.
It uses an ingredient called "bulghar wheat" which is completely new to me but it does a great job of packing a bit of "stodge" in to a dish.
Obviously you can see it went down a storm with the small one...
I just had to make sure the sweet potato and butternut squash were in big graspable chunks...
Great recipe! Once again BBC Good Food comes up trumps! Give it a go! :D
Yum! We will soon be eating a lot of squash and pumpkin (we have a winter CSA) so this looks like it should make it into my rotation! Thanks for sharing!
ReplyDeleteLet me know how it goes! Enjoy :)
DeleteIsn't she cute? Looks like she likes it!
ReplyDeleteShe did indeed! I think root veggies and sweet things like this are a pretty easy win with her :)
DeleteI can see it got a big seal of approval from your little one!! What a cutie-pie! :)
ReplyDeleteThank Candy C she absolutely did! :D
DeleteI imagine stodge is like bulk or substance? Love that word! :)
